Garlic Parmesan Mashed Potatoes
5-6 medium to large Yukon gold potatoes
1/2 cups warmed whole milk
1/2 cup sour cream
2 tbsp. butter
1 tsp. garlic powder
1/2 tsp. cracked pepper
1/2 cup grated Parmesan cheese
Wash, peel and dice the potatoes, keeping them as close to the same size. Place in a large saucepan, add the salt and cover with water. Bring to a boil over medium high heat and then slightly reduce the heat to maintain a rolling boil. Cook potatoes until fork tender, about 15-20 minutes.
Remove the potatoes from the heat and drain off the water. Mash the potatoes and add the butter, pepper, garlic powder, sour cream and warmed milk. If mixture is too thick add some more warm milk to thin out. Let the mashed potatoes stand for 5 minutes to thicken up and then serve.
