This vegetable sofrito (puree) is a great way to add flavor to many dishes. It is also a great way to hide vegetables from those picky eaters without sacrificing flavor. Feel free to add your favorite seasoning or fresh herbs to compliment your dish.

Jacob’s Vegetable Sofrito

Servings: 4 cups

Ingredients

1 tomato
1/2 red bell pepper
1/2 green pepper
1/2 red or yellow onion
2 cups spinach
1 cup baby carrots
1 cup broccoli
1 tsp. salt
1 tbsp. olive oil

Directions

Blend all of the ingredients together in a food processor or blender until smooth. Place in refrigerator up to 5 days or freeze in small portions.
